Fun with Herbs
Summertime always inspires me to try my hand at growing my own herbs. Since I'm cooking for one person, I usually end up throwing away a lot of unused herbs when I buy them at the store. Growing my own allows me to make them last much longer. The herbs I use the most are basil and oregano so, I recently picked up each of those plants along with some dill for my annual patio garden.
As I was thinking about ways I could use the basil, I recalled a lemonade I had once that was flavored with strawberries and basil. It was a delicious combination! And it just so happened that I had Crystal Light Lemonade and strawberries on hand. So I decided to make a pitcher to enjoy for the Memorial Day holiday. It's a fun treat to cool off with while adding a little bit of fiber from the strawberries and eliminating the sugar.
Here’s how I did it:
One packet of lemonade flavored Crystal Light (follow instructions on packaging)
1 cup of strawberries sliced into quarters
Handful of fresh basil leaves torn into pieces or rolled up and cut into ribbons
